La Bandeja Paisa

The bandeja paisa is the signature dish of Antioquian cuisine and one of Colombia’s most iconic dishes. Also known as bandeja de arriero or bandeja montañera, its origins date back to the gruelling working days of the muleteers and farm labourers of Antioquia, who needed a hearty and nutritious meal to get them through long hours of work.

This iconic dish is characterised by its generous portion and variety of ingredients, served on a large platter to showcase its diverse flavours. Its traditional composition features a combination that reflects the region’s rich culinary heritage.

It is believed that the bandeja paisa evolved from the traditional ‘típico montañero’, another popular dish that provided sufficient energy for farm work. Over time, it has become a symbol of Paisa identity and one of the unmissable culinary experiences for visitors to Medellín and Antioquia.
